Ginger Miso Noodle Soup

Equipment

Ingredients
- 4 leaves wombok or any cabbage
- 1/2 carrot
- 1 stick celery
- 1 spring onion
- 100 g udon noodles
- 1/2 tbsp oil
- 1 tsp ginger paste
- 1 tsp miso paste
- 1 tsp white pepper
- 1/4 tsp msg
- 2 cups chicken stock
- 1 tsp soy sauce
- 1 tsp fish sauce
- 1 tsp chilli oil
Instructions
- Chop up or slice all your vegetables into small pieces.
- To a medium sized pan, add your oil and all of your veggies in and sauté for a few minutes.
- Add your ginger and miso paste as well as any seasonings of your choice, I’ve used white pepper and msg to bring out the flavours more.
- Add your chicken stock plus your fish sauce, soy sauce and chilli oil.
- Once the soup comes to the boil add in your udon noodles and cover.
- Boil for 2-3 minutes (or as long as your noodles need).
- Pour into a bowl and enjoy!
