For the buffalo sauce: Mix together melted butter, buffalo sauce until combined and set aside.
For the blue cheese dressing: Mix together sour cream, buttermilk, garlic powder, 1 tsp paprika, and crumbled up blue cheese until smooth.
Cut hard tofu into even cubes, dry with paper towels to your best ability.
Sprinkle with cornflour, 1 tsp paprika, cayenne, salt, pepper and roll the tofu around until covered.
In a hot pan add oil to cover the bottom of the pan, add tofu in batches and turn until all sides are golden.
Pop cooked tofu on a paper towel to drain excess oil.
Once all the tofu is cooked, pour over the buffalo sauce and serve alongside the blue cheese dressing.
