Meal prep bacon and egg muffins
Meal prepping breakfast is ELITE for those busy mornings. I love having these in my freezer on days that I'm in a rush (and my dog is whining for a walk). I hope you enjoy!
Servings 6 muffins
Equipment
- 1 muffin tray silicon works best
- 2 baking trays
- 1 Knife
- tin foil or storage containers
Ingredients
- 6 eggs
- 6 english muffins
- 12 rashers short cut bacon
- 6 slices cheese
- butter
- salt and pepper
Instructions
- Preheat your oven to 180 degrees, fan forced.
- Crack 6 eggs into a silicon muffin tray.
- Cut in half 6 English muffins and lay on a large baking tray facing down.
- To a large baking tray, add your slices of bacon.
- Put the bacon in the oven first, this needs 20 minutes flipping half way.
- The eggs also go in the oven, they only need 10 minutes, as well as the English muffins.
- To assemble, add butter to one half of the English muffin and a slice of cheese to the other half.
- Then add the eggs to the buttered side and the bacon to the cheese side.
- Add salt and pepper to taste.
- Sandwich them together, wrap in tin foil and pop in the freezer ready to heat up for breakfast throughout the week!
- NOTE: Do not put the tin foil in the microwave, remove this prior to heating.
