Meal prepping breakfast is ELITE for those busy mornings. I love having these in my freezer on days that I'm in a rush (and my dog is whining for a walk). I hope you enjoy!

  • 1 muffin tray silicon works best
  • 2 baking trays
  • 1 Knife
  • tin foil or storage containers

Ingredients

  • 6 eggs
  • 6 english muffins
  • 12 rashers short cut bacon
  • 6 slices cheese
  • butter
  • salt and pepper

Instructions

  • Preheat your oven to 180 degrees, fan forced.
  • Crack 6 eggs into a silicon muffin tray.
  • Cut in half 6 English muffins and lay on a large baking tray facing down.
  • To a large baking tray, add your slices of bacon.
  • Put the bacon in the oven first, this needs 20 minutes flipping half way.
  • The eggs also go in the oven, they only need 10 minutes, as well as the English muffins.
  • To assemble, add butter to one half of the English muffin and a slice of cheese to the other half.
  • Then add the eggs to the buttered side and the bacon to the cheese side.
  • Add salt and pepper to taste.
  • Sandwich them together, wrap in tin foil and pop in the freezer ready to heat up for breakfast throughout the week!
  • NOTE: Do not put the tin foil in the microwave, remove this prior to heating.
