One Pot Pasta

Make a one pot pasta with me. This recipe got me through lockdown in 2020, I would add anything and everything I had in my fridge and it would turn out different every time!

Ingredients

  • 100 g pasta I use Vetta penne
  • 2/3 cup vegetable stock
  • 2/3 cup milk
  • 100 g veggies of choice I usually use broccoli, cauliflower, zucchini, spinach
  • 15 g Parmesan cheese
  • 10 g butter
  • 1 tbsp chilli flakes
  • 1 tsp garlic
  • 1 tsp paprika
  • 1 tsp cayenne pepper
  • 1 tsp chilli powder
  • 1 tsp chilli oil

Instructions

  • Cut up all your vegetables, I like to get everything ready before I start any cooking so I don’t get stressed trying to time everything right.
  • If using a block of cheese, grate your cheese, otherwise skip this step.
  • Add everything to a pot that is big enough to hold approx. 4 cups of water and make sure it has a lid!
  • I add pasta then vegetables then all the spices then finally I add stock and milk.
  • Mix everything around and ensure all the pasta is covered with the liquid.
  • Turn the heat on to medium high.
  • Cover and wait till it boils (usually around 3-5 minutes).
  • Once the ‘sauce’ comes up to boil, turn the heat down slightly.
  • If the sauce becomes too dry add more water bit by bit until the pasta is cooked.
  • Once the pasta is cooked and the sauce has cooked down, add in your cheese.
